Newbie Question: head gaskets and therm gaskets

In reading posts here, I've seen comments thating that buyers should make sure to find one with the head gaskets changed and the thermostat housing gaskets changed.

So, what'd the deal with these gaskets? were they a recall? And how can you tell if they were changed or not?
