I read now and then that disconnecting the front sway bar while drag racing for better front end rise/weight transfer seems to be a thing that's often recommended .

Have any Viper owners tried it? Any handling complaints while hurtling down the 1320?

You can unbolt one side for 90% of the benefit and a lot less work. Should be quite noticable on the 60 ft.

We've been 8's with and without the sway bar. It seems like as time passes it takes less and less to get it done.

8's - with an excess HP on tap, and larger slicks, probably let the owner/driver put more of an emphasis on handling.

Those of us still at the intern level might need all the chassis tricks we can find

The shock travel stops before the swaybar limits travel. I used to take mine on and off and no longer do so. The only gain you will see is losing the weight.
