Do you suffer from sweaty legs all summer long or have you, like the cactus, adapted to the heat? Are your cars track only?
What about ACR owners? Anyone put on a lot of street miles? Did going to high flow cats make the the heat tolerable or would you look for an a/c car if you had to do it all over again?
You can get an ACR with a comfort package that includes A/C if you prefer......but if you are going to track it, why bother with A/C you know? Living in Texas though I would prefer to have an ACR with the comfort package, in some states you could probably tolerate it without it, hell even being in a Viper with A/C in the Texas heat is a killer!
To clear up the misconception, only a handful of cars were ever built without AC.
Maybe when you're talking ACR, but there are a butt-load of '92-3-4 RT-10s that didn't have A/C. My black '93 was delivered on a 97 degree August day. 1 hour was all I could stand before I told the service manager to install the A/C package. I didn't care if it took 2 weeks to do it.

Yes, I tend to forget those cars. They didn't even have real windows, so AC was the last of your worries!
I have A/C and use it in the winter. It gets toasty inside if you're driving around for long periods of time, especially if you get caught in traffic and the firewall sort of heatsoaks. I don't think I'd buy a Viper without A/C unless it was my second one. Having it just makes the driving experience more pleasurable.
I had an ACR without air. I would stand in front of my refrigerator with the door open for ten to fifteen minutes before each cruise and never had a problem. And I live in Texas.
