There are rumors going around that some of you "Viper Guys" and "Gals" can really cook! How about sharing your favorite recipes with the rest of us. You can submit them to viperalleycookbook@yahoo.com. Feel free to include pictures, if ya got 'em, and a little personal tidbit about it. PBG and I will compile the recipes contributed into a d/l file that all can access.
We expect to get alot of ribbing for this, but also know we'll get contributors also
This is without a doubt, the best tasting thing that I have ever cooked. I cooked it on sunday. I had made "Beer Can Chicken" a couple weeks ago, and it was great, but I liked this a hell of a lot more. It's cooked basically the same way. The chicken was super moist, very tender, and tasted amazing. I highly recommend it.
Ingredients
1 5 pound whole chicken
2 cans Cherry Coke
1 cup salt (about)
1 cup white sugar (about)
Morton's Nature's Seasoning (or some basic seasoning that is basically like salt, garlic, pepper)
1 beer can chicken stand (it's a metal ring stand thing that you can get at any barbecue store, or like Home Depot).
Clean the chicken by removing the guts and wash it. Take the chicken and put it in a large bowl that is big enough that the chicken can fit in, but still have clearance at the top. Pour the salt and sugar over the bird, then fill up the bowl with water, so that the chicken is completely covered (this is a "brine"). Wrap the bowl with foil, stick in the fridge, and let sit over night.
In the morning, dump the brine, and then liberally coat the chicken, inside and out, with the Morton's Nature's Seasoning.
If cooking with my style grill (I'll post a pic below of my grill), you will need about five hours of actual cooking time. The way I cooked it, is essentially smoking it, but I am sure you could grill it too. That would take less time. Fire up the grill using charcoal, or better yet, whole wood chunks. I just used charcoal to get the fire going.
Get a pan that is big enough to fit under the bird (see pic) and fill it with one of the cans of cherry coke, and some water. Fill the pan about halfway, and stick it under where the bird will be sitting.
Open the cherry coke can, stick in the can rack, and then sorta "impale" the chicken on the rack, so it stands upright. Stick in on the grill and close the lid. After about three hours or so, open the lid, rotate the chicken 180 degrees, and close it up.
During cooking, I added cherry and alder wood chunks, both of which are good for poultry.
I forgot to take a pic of the finished chicken, but the pic below was taken when I was rotating the bird, halfway through.

I just bought mine about a month ago. I now have that, a gas grill, and the little foot or so in diameter upright smoker (you know the cheap-o one that everyone has...lol). So far I love the new grill. I have made ribs, a couple coffee steaks, the cherry coke chicken, and the beer can chicken.
The grill with the offset firebox option was only like $170 at Lowe's, and came with free assembly.
Personal thanks to those who were/are brave enough to submit some favorite recipes. We have gotten a little more than a dozen so far Recipes can be for anything, not just main dishes. Feel free to send in your drinks (alcoholic and non), desserts, snacks.. whatever. I will be including the Bread and Butter pickles and my Zucchini bread. (Rumor has it, they aren't bad). Ladies, I have about 50 still to come. does your yahoo address have enough room for a zipped file, or should I ftp it?
Bring it on...I think it will handle it. Now, are these all ones that you have made? If so, please make comments as to how they turned out and how much you liked them.
