Like Midwest said, keep the business cars under an LLC and get an umbrella policy in addition to garage insurance. If you are actually selling vehicles and people test drive them with the dealer plate you are going to want to have comp/liability on that plate as well.

Anything you drive personally, put it in your name and plate it. Yes some dealers do enjoy the perks of using a dealer plate but if something goes wrong your stuff becomes somone else's stuff.
