Overheating/Head gaskets ?

Hi everyone,
This is my first post so go easy on me.
I have a '97 GTS w a paxton s/c, heads, aluminum radiator, 180° t-stat, Vec 2, fuel system upgrade, motor has been built w about 8k on it and thats just scratching the surface. I can drive the car all day just crusing in town or on the highway with no problems at all; as soon as I "get into" the car and go for a rip, even a short one, the temp will go into the red fast stay there for a few min. then drop down really fast almost like a stuck t-stat. I dont believe that its the t-stat scince I can drive it with out any problems with out using boost. I think it may be a leaky head gasket any ideas? Please help.

P.S. This happend 3 times shut the car down right away, so no to do damage, and haven't drove it scince. I wont until the problem is fixed.
