A stock Viper motor will hold between 900-1000 RWHP if it is a 99 or earlier. After 99, all Vipers got cast pistons. CPE has a car that has completed 8200 miles since November with around 800 RWHP (sometimes more). Jody Gleason drives the piss out of that car, so you can be sure those were hard miles. SRT heads were a little better, but both can be ported by Greg Good to very good result. 1200 RWHP is not hard to achieve and could be done with a CPE sidemount for 20k or so installed depending on options + engine build. Granted, at that point you could make more like 1300-1400 RWHP, maybe more.
